Cajun Rice and Beans with Smoky Andouille Sausage

  • 3/4 cup brown rice
  • 1 15 ounce can of red beans, drained
  • 1 10 ounce can of Rotel diced tomato with green chilies
  • 1/2 cup smoked Andouille sausage, diced
  • 1 tsp beef bullion granules
  • 1 tsp Cajun seasoning
  • Sharp cheddar and/or jack cheese
  • fresh cilantro, chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp white pepper
  • 1 1/2 cups water
Heat 1 tbsp of oil. Add the brown rice and brown for 2-3 minutes, stirring. Add the remaining ingredients. Bring to a boil. Turn heat to low, cover, and cook for 45 minutes.

Serve this garnished with shredded cheese and fresh chopped cilantro.
