- 3/4 cup brown rice
- 1 15 ounce can of red beans, drained
- 1 10 ounce can of Rotel diced tomato with green chilies
- 1/2 cup smoked Andouille sausage, diced
- 1 tsp beef bullion granules
- 1 tsp Cajun seasoning
- Sharp cheddar and/or jack cheese
- fresh cilantro, chopped
- 1/2 tsp kosher salt
- 1/4 tsp white pepper
- 1 1/2 cups water
Serve this garnished with shredded cheese and fresh chopped cilantro.
