Grilled Garlic Lime Chicken with Watermelon Salsa

  • 2 cups diced watermelon, drained
  • 1/2 cup crumbled feta
  • 1 cup chopped red and yellow bell peppers
  • 1 finely chopped small jalapeno pepper
  • 2 tbsp chopped cilantro
  • 2 tbsp sliced green onion
  • juice from 1/2 a lime
  • 1/4 tsp each kosher salt and white pepper
Place all of your ingredients into a large bowl and toss gently. Refrigerate for about an hour before serving.



I marinated four boneless skinless chicken breasts in these ingredients:
  • 1/4 cup extra virgin olive oil
  • 1/2 cup dry white wine
  • juice from 1/2 a lime
  • 2 tsp mince garlic
Marinade the chicken for at least an hour. Grill and top with Watermelon Salsa.
