- 2 cups diced watermelon, drained
- 1/2 cup crumbled feta
- 1 cup chopped red and yellow bell peppers
- 1 finely chopped small jalapeno pepper
- 2 tbsp chopped cilantro
- 2 tbsp sliced green onion
- juice from 1/2 a lime
- 1/4 tsp each kosher salt and white pepper
Place all of your ingredients into a large bowl and toss gently. Refrigerate for about an hour before serving.
I marinated four boneless skinless chicken breasts in these ingredients:

- 1/2 cup dry white wine
- juice from 1/2 a lime
- 2 tsp mince garlic
