- 6 Yukon Gold Potatoes
- 1/2 cup low-fat buttermilk
- 1/2 cup light sour cream
- 1/ 2 cup chopped fresh basil
- 1/4 cup sliced green onion
- 2 cloves chopped garlic
- 1 tbsp olive oil
- 1/2-3/4 tsp salt
- 1/2 tsp white pepper
Saute the garlic in a little olive oil for a minute or two.
Whisk together the basil, green onion, garlic, olive oil, sour cream, buttermilk, salt and pepper. Stir in the potatoes.
You can serve this warm or chilled.
