Grilled Yukon Gold Potato Salad with Buttermilk and Fresh Basil

  • 6 Yukon Gold Potatoes
  • 1/2 cup low-fat buttermilk
  • 1/2 cup light sour cream
  • 1/ 2 cup chopped fresh basil
  • 1/4 cup sliced green onion
  • 2 cloves chopped garlic
  • 1 tbsp olive oil
  • 1/2-3/4 tsp salt
  • 1/2 tsp white pepper
Pierce potatoes several times and cook in microwave for about 5 minutes. Wrap in foil and place on top rack of grill. Cook for about 15 minutes until tender but not mushy. Unwrap and allow to cool enough to handle. Cut into pieces.

Saute the garlic in a little olive oil for a minute or two.

Whisk together the basil, green onion, garlic, olive oil, sour cream, buttermilk, salt and pepper. Stir in the potatoes.

You can serve this warm or chilled.
