Turkey Burgers with Mozzerella Olives and Basil with Fire-Roasted Tomatoes

  • 1 lb ground turkey
  • 1 tsp minced garlic
  • 1/3 cup chopped olives
  • 4 slices of string cheese
  • 1 tbsp chopped basil
  • 1-2 tbsp grated parmesan
  • 1 tsp kosher salt
  • black pepper
  • 15 oz can Fire-Roasted Tomatoes
  • 1 tsp chopped basil
  • 1 tsp olive oil
  • 8 pieces of sliced whole wheat sourdough bread
Mix the turkey, olives, garlic, basil, parmesan, salt, and pepper together in a bowl. Place into the freezer for about 10-15 minutes.

Put your undrained tomatoes, 1 tsp basil and olive oil into a saucepan. Simmer while you make the burgers.

Form a thin patty and place on wax paper. Place slices of string cheese onto patty.
Form another thin patty and place over the top of the other patty. Pinch sides to seal.

Place on either an outdoor or George Foreman Grill to cook.

Place burger on a slice of bread. Top with the Fire-Roasted Tomatoes and maybe add a little lettuce if your heart desires.
