- 1 package of Manicotti, cooked according to directions
- 3-4 boneless chicken breasts, cooked and shredded
- 4 slices bacon, cooked well and crumbled
- 1 8 oz package of light cream cheese, softened
- 2 cups of Mozzarella cheese, shredded
- 1 bunch of fresh basil, chopped (You'll need about 1/3 of a cup, more if you like basil as much as I do.)
- 2 cloves garlic, chopped
- juice of 1 to 2 lemons
- 3 tbsp olive oil
- Kosher salt
- Cracked pepper
For the Salsa
- 4 seeded Roma tomatoes, diced
- juice from 1 lemon
- 2 tbsp chopped basil
- 1 tbsp olive oil
