Chicken Manicotti with Tomato Lemon and Basil Salsa

  • 1 package of Manicotti, cooked according to directions
  • 3-4 boneless chicken breasts, cooked and shredded
  • 4 slices bacon, cooked well and crumbled
  • 1 8 oz package of light cream cheese, softened
  • 2 cups of Mozzarella cheese, shredded
  • 1 bunch of fresh basil, chopped (You'll need about 1/3 of a cup, more if you like basil as much as I do.)
  • 2 cloves garlic, chopped
  • juice of 1 to 2 lemons
  • 3 tbsp olive oil
  • Kosher salt
  • Cracked pepper
In a large bowl combine the chicken, bacon, cheeses, basil, lemon juice, garlic, olive oil, salt and pepper. Stuff Manicotti and place in a well oiled baking pan. Bake covered on 350 for about 30 minutes.

For the Salsa

  • 4 seeded Roma tomatoes, diced
  • juice from 1 lemon
  • 2 tbsp chopped basil
  • 1 tbsp olive oil
  • kosher salt
  • cracked pepper
Combine all ingredients. Place as much as you like on top of Manicotti. Eat up!
