1 1/4 lb ground turkey
2/3 or so cup panko bread crumbs
2 tbsp ketchup
1 tbsp Worcestershire sauce
2 cloves chopped garlic
1/2 cup shredded zucchini
1/2 cup shredded cheddar cheese
1 egg
salt and pepper to taste
Mix all ingredients thoroughly and spoon into muffin tins. You'll want them filled to the top of each cup. I got 10 cups out of this mix.
One recipe I saw called for instant mashed potatoes and I can see how that would be a little easier for piping the "frosting" on top of each "cupcake" but I don't care for the taste of instant so I used the real thing.
For the potato frosting I used:
5 medium sized Yukons, peeled
low fat buttermilk
2-3 tbsp butter
salt and pepper
Cut each potato into 8-10 equal pieces. Place into a pot and cover with water, bring to a boil and cook, stirring occasionally until tender. Whip potatoes with butter. Add buttermilk until desired consistency is reached. Salt and pepper to taste.
Place the potatoes into a frosting bag and using a fairly large attachment, decorate the top of each "cupcake".
You can top your "cupcakes" with anything you desire. I used diced red peppers but chives, peas, green onions or even cheese would also be fun.
