1 cup oats
1 cup whole wheat pastry flour
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup oil
1/2 cup reduced fat buttermilk
1 tsp vanilla
1/2 cup chopped fresh strawberries
1 cup chocolate chips
In a medium bowl whisk together oats, flour, sugar, baking powder, baking soda and salt. In a larger bowl combine the egg, oil, buttermilk and vanilla. Beat until combined. Add the dry ingredients to the egg mixture. Stir just until combined. Fold in the strawberries and chips.
Divide batter evenly into 12 greased muffins cups and bake at 350 for about 20 minutes.
