1 1/2 lb diced chicken (I used boneless chicken breast)
1 can Rotel with lime and cilantro
1 can or bottle of enchilada sauce (Trader's Joes has a great one!)
4 cups chicken broth
2 cloves chopped garlic
5-6 small corn tortillas, cut into 1" pieces
2 tbsp canola oil
juice from 1/2 lime
For Garnish
Cilantro
sour cream
diced tomato
*fried corn tortillas strips
Place all ingredients into slow cooker. Cook on high for 4-5 hours or 7-8 on low. Top with cilantro, sour cream, diced tomato and fried corn tortillas strips. Avocado would be amazing as well!
To make the tortillas strips- Heat 1/4" of canola oil in a pan. Cut corn tortillas into thin strips. Fry until golden brown. Place on paper towels and season with kosher salt.
