Orzo Pasta Primavera

8 oz cooked Orzo
1-2 small zucchini, thinly sliced
1/2 cup fresh peas
1/2 cup red bell peppers,thinly sliced
1/2 cup diced tomato
2 tbsp chopped basil
2 cloves garlic, chopped
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp butter
1/2 tsp kosher salt
1/4 tsp white pepper
1/4 grated Parmesan
1/2 cup bread crumbs

Heat butter in a large skillet on medium heat. Add the garlic and saute for a couple of minutes.

Add in the zucchini, peas, peppers, basil and lemon juice. Saute for about 5 minutes. Add the diced tomato and remove from heat. Add the Orzo and toss.

In another skillet, heat the olive oil on medium heat. Add the breadcrumbs and brown. Stirring constantly. Watch that is doesn't burn!

Top the pasta with Parmesan and bread crumbs. Serve Warm. I loved the fresh, uncomplicated flavors of this dish.
