Banana Cupcakes with Peanut Butter and Honey Frosting

  • 1 1/2 cups flour
  • 3/4 cups sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 stick melted butter
  • 2 bananas, mashed
  • 2 large eggs
  • 1/2 tsp vanilla

In a large mixing bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Next, add the melted butter, mashed bananas, eggs, and vanilla. Stir until combined.

Fill muffin cups lined with papers 1/2 full with batter. Bake in a 350 degree oven for 15-18 minutes until toothpick inserted comes out clean.

Bake for 15-18 minutes until toothpick inserted into center of cupcake comes out clean.

Cool completely before frosting.

For the frosting you will need:
  • 3 cups powdered sugar
  • 1/4 cup creamy peanut butter (not the stirring kind)
  • 1/4 cup butter, softened
  • 2-4 tbsp milk
  • 1 tbsp of honey
  • 1 tsp vanilla
Place the butter, peanut butter, honey, vanilla and 2 tsp of milk into a mixing bowl and beat until smooth. Add the powdered sugar a little at a time, mixing after each addition until desired consistency is reached, adding more milk if needed.

Makes 12 cupcakes.
