Peachy Keen Muffins

* 1/2 packed brown sugar
* 1/2 cup reduced fat buttermilk
* 1/3 cup vegetable oil
* 1 tsp vanilla
* 1 tsp honey
* 1 egg
* 1 2/3 cup whole wheat pastry flour
* 2 tsp baking powder
* 1/4 tsp salt
* 1 cup chopped canned peaches, drained (or fresh peaches)

For the topping:

* 1/4 cup packed brown sugar
* 1 tbsp cold butter

Cut the cold butter into the brown sugar with a pastry cutter and set aside.

Heat oven to 375 degrees. Grease bottom of muffin cups or use liners. In a large bowl, combine 1/2 cup brown sugar, buttermilk, oil, vanilla, honey, and egg. Stir until well blended. Add the flour, baking powder, and salt. Stir just until moistened. Fold in the peaches. Divide evenly among muffin cups.

Sprinkle with topping.

Bake 16-18 minutes or until toothpick inserted comes out clean.
