Cedar Plank Grilled Stuffed Pork Chops

  • 4-6 boneless thick sliced pork chops (Mine were about 1" thick.)
  • 1 small zucchini, sliced
  • 3 cloves chopped garlic
  • 1/2 -3/4 cup chopped basil
  • 1/3 -1/2 cup grated Parmesan
  • 1 tbsp olive oil
  • 1 tbsp butter
  • kosher salt and cracked pepper
Saute the zucchini and garlic in the olive oil and butter for 2-3 minutes.

Make a cut in each pork chop 3/4 of the way. Open each pork chop. Layer the zucchini and garlic, fresh basil, Parmesan, kosher salt and cracked pepper.

Fold pork chops and place on the grill to sear. Sear for just a few minutes on each side. Remove from grill and place on a prepared cedar plank.

Place the plank directly on the grill and grill pork chops on medium heat for about 15-20 minutes until pork reaches 170 degrees.

Remove and allow pork to rest for a couple of minutes before serving.
