Traiblazin' Muffins

  • 1 1/2 cups whole wheat pastry flour (I used Bob's Red Mill)
  • 1 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup packed brown sugar
  • 1 stick butter, melted
  • 1/2 cup low fat buttermilk
  • 1/2 cup peanut butter
  • 2 large eggs
  • 4 oz Rock Creek Nut Company Trailblazer Mix, chopped (mix of cranberries, pumpkin seeds, coconut, almonds, walnuts, and raisins)

Mix together the dry ingredients. Add the wet ingredients and chopped Trailblazer Mix. Stir just until combined. Fill lined muffin cups nearly full.

Bake at 375 degrees for 16-18 minutes until toothpick inserted comes out clean.
