- 1 1/2 cups whole wheat pastry flour (I used Bob's Red Mill)
- 1 cup oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 cup packed brown sugar
- 1 stick butter, melted
- 1/2 cup low fat buttermilk
- 1/2 cup peanut butter
- 2 large eggs
- 4 oz Rock Creek Nut Company Trailblazer Mix, chopped (mix of cranberries, pumpkin seeds, coconut, almonds, walnuts, and raisins)
Bake at 375 degrees for 16-18 minutes until toothpick inserted comes out clean.
