Cranberry and Apple Baked Oatmeal

3 cups rolled oats
3/4 cup packed brown sugar
2 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
2 eggs lightly beaten
1 cup milk
1/2 cup melted butter, cooled to room temperature
1/3 cup apple butter
1 large apple, peeled and grated
1/3 cup dried cranberries

Warm milk or cream (pour over warm oatmeal if you so desire)

In a large bowl combine the oats, brown sugar, baking powder, cinnamon, and salt. In a smaller bowl combine the eggs, milk, and butter. Add egg mixture to oat mixture. Stir to combine. Fold in the apple and cranberry. Pour into a greased 9 inch round (or square) pan. Bake on 35o for 35-40 minutes. Serve warm.
