2 1/2 cups whole wheat pastry flour
1 tbsp sugar
1 tbsp baking powder
3/4 tsp cream of tartar
1/2 tsp salt
1/2 cup Kerrygold Irish Butter, cut into pieces
1 cup grated Kerrygold Vintage Cheddar
2 tbsp chopped herbs (I used parsley)
1 large egg
1 1/4 cups milk
Preheat the oven to 400 degrees. Spray oil 14 muffin tins. Set aside.
Whisk together the flour, sugar, baking powder, cream of tartar and salt. Cut in the butter. Stir in the cheese and herbs. Stir in the egg and milk.
Scoop dough evenly into muffin cups. Bake for 15-20 minutes until golden brown and toothpick inserted comes out clean.
