1 cup oats
1 1/4 cup whole wheat pastry flour
1/2 cup cocoa powder
1/3 cup ground golden flax
1 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 cup canola oil
1 cup stout beer
1 tsp vanilla
1 cup chocolate chunks
Spray oil 16 muffin cups
In a medium bowl, whisk together the oats, flour, cocoa powder, flax, sugar, baking powder, baking soda and salt. In a large bowl, whisk together the eggs, oil, stout beer and vanilla. Add the dry ingredients to the wet ingredients. Stir to combine. Fold in the chocolate chunks.
Bake at 375 for 16-18 minutes.
