Serves 2
2 chicken breasts, cooked and diced
1 small apple, cored and diced
1 stalk celery, diced
1/4 cup mayo (more or less depending on your taste)
1 tbsp red wine vinegar
1/2 tsp celery seed
salt and pepper
In a medium bowl, combine all ingredients.
Serve on a bed of your favorite greens.
