Peanut Butter and Honey Oatmeal Muffins

Makes about 16 muffins

1 stick unsalted butter, softened
1/2 cup brow sugar, lightly packed
1/4 cup honey
1 egg
1 tsp vanilla extract
1/2 cup milk
1 ripe banana, mashed
2/3 cup crunchy peanut butter
1 cup whole wheat flour
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
1 tbsp ground golden flax
1 tsp ground cinnamon
1/2 cup rolled oats
1 cup Cheerios

Line muffin pans with paper liners. Preheat oven to 350.

In a large bowl, cream together the butter and brown sugar. Stir in the honey, egg, vanilla, milk, banana and peanut butter. In a small bowl, sift the flour, baking powder, baking soda and salt. Stir in the flax and cinnamon. Add the flour mixture to the wet ingredients and stir just until combined. Fold in the oats and Cheerios.

Fill muffin cups nearly full. Bake for 16-18 minutes until toothpick inserted into center of muffin comes out clean.

You can easily add other fun ingredients to these. Dark chocolate chips, raisins, cranberries are just a few idea. ;)
